MSc.: Vitamin C in apple cultivars and apple juice
At Pometet at KU-Life in Taastrup more than 800 genotypes of apples are preserved in a large genebank collection compricing cultivars from more than 20 countries around the globe - including wild types from the centre of the genetic origin in Kazakstan. About 300 are local cultivars from Denmark.
In a large research project the Danish part of the collection is studied in relation to fruit quality and quality for use as apple juices.
In connection to this, a central issue is the content of vitamin C in the different genotypes as well as methods to maintain a high content of health compounds such as vitamins in the processed juices.
The project will be in cooperation between the departments of Agriculture and Ecology and Food Science.
